Raspberry & Redcurrant Fool
These deliciously moreish homemade wild Raspberry and Redcurrant fools are super-quick to make, and taste outrageously good. Fruity cream heaven! Works equally well with Wild Strawberry, Blackberry, Bilberry or Cherry!
Ingredients

Quantity: Makes 4 Fools.
- 225g of wild raspberries
- 225g of wild redcurrants
- 3 tbsp of granulated sugar
- 300ml double cream
- a few whole raspberries and redcurrants to decorate
Method
- Wash the wild Raspberries and Redcurrants.
- Place the fruit in a food processor with the sugar and blitz to a thick sauce.
- Whip the cream until stiff. Gently fold the raspberry sauce into the cream.
- Swirl into to individual ramekins or cocktail glasses (if you're feeling posh!) and chill thoroughly. Top with whole raspberries, redcurrants or mint leaves and serve.
